Flan

Carmelize 1 cup of sugar:  Stir the sugar constantly as it slowly cooks over a low flame.  Once it is melted, pour the carmelized sugar into a loaf pan coating the sides.  Careful…it will be hot.

Mix together at room temperature…

2 cups sugar

8 whole eggs

4 egg yolks

1 tsp vanilla

1 1/2 cups milk

1 1/2 cups heavy cream

Pour the mixture into the loaf pan.

Bake in a Mary’s Bath (…put the pan in a layer of water sitting in a larger pan to ensure cooking at an even temperature) at 300 degrees for 1 hour…or until firm in the center.

Refrigerate and let sit for 24 hours before removing from the form and serving.
