Boiled Peanuts

This is an easy one…something you find during football season.  You can freeze boiled peanuts, so buy in bulk.  It’s easy and gives your kitchen an earthy smell.

In a large pot, put…

1-5 lbs. of green peanuts (…meant for boiling.  You can find them at a farmers’ market or an Asian market)

pour water in the pot until the peanuts float with a couple of inches to spare.  Add seafood boil seasonings (optional)

Bring to a boil.  Boil for 1 hour and 15 minutes.  Turn off the heat and pour in

1 cup salt

Let the peanuts soak in the salt water for one hour.

Drain, peal and enjoy!  You can store in the refrigerator.
